Although we may think that it is a typically Spanish dessert, it is actually prepared, with some variations, in many countries around the world. Similar desserts exist in India, Turkey, Portugal … it is also eaten in many Latin American countries.
The most traditional homemade rice pudding recipe is prepared with few ingredients: a round grain rice, milk, sugar, lemon peel and cinnamon for flavoring. But like all traditional recipes, there are many variations, some even use cream or condensed milk to achieve a creamy rice pudding in a simple way.

- 1 liter of milk
- 250 g of round rice
- 100 g of sugar
- 1 lemon
- 1 cinnamon stick
- 2 tablespoons ground cinnamon
Pre-cook the rice in water
- We bring to a boil a saucepan with enough water, and when it starts to boil we add the rice. Cook 10 minutes and remove from heat (without straining).
Flavor the milk and cook the rice
- In another saucepan, bring the milk to a boil with the sugar over low heat, stirring so that it dissolves. When the milk begins to boil, add the lemon peel (only the yellow part) and the cinnamon stick, add the drained rice and simmer for 15 minutes. We remove from time to time so that it does not stick.
- After 15 minutes, pour the rice pudding in a flat bowl or in individual bowls and sprinkle with cinnamon. We serve cold.
