We bring to a boil a saucepan with enough water, and when it starts to boil we add the rice. Cook 10 minutes and remove from heat (without straining).
Flavor the milk and cook the rice
In another saucepan, bring the milk to a boil with the sugar over low heat, stirring so that it dissolves. When the milk begins to boil, add the lemon peel (only the yellow part) and the cinnamon stick, add the drained rice and simmer for 15 minutes. We remove from time to time so that it does not stick.
After 15 minutes, pour the rice pudding in a flat bowl or in individual bowls and sprinkle with cinnamon. We serve cold.
