Garlic Butter Shrimp Zucchini Noodles Recipe

It is not the first recipe with zucchini noodles that I share. The one who is now publishing another tells you how much I like them, although it sounds strange. The reason I like both recipes is because they both have strong flavors, bringing up the delicate flavor of zucchini. The first one had Mambá, this one has a lot of garlic.

A few days ago, a fellow Latin culinary blogger told the story of someone who was surprised that she used a whole head of garlic in a recipe. Your reader thought it definitely had to be a mistake.

What made us both smile is the idea that there may be such a thing as “too much garlic.” I can easier believe in unicorns and fairy godmothers.

Well if you’re one of those who hates garlic (or you’re a vampire), I suggest you stay away from this dish. Otherwise, welcome, fellow garlic fanatic.

This is a recipe that diabetics and those on a low carb diet will love. It is like a pasta dish, but not to blame. Zucchini noodles are my favorite pasta substitute, and of course if you’re not on a diet you can use real pasta. I recommend spaghetti for this one.


Garlic Butter Shrimp Zucchini Noodles Recipe

  • 320g of penne
  • 500g of shrimp
  • 250g of prawns
  • 4 courgettes
  • 1/2 glass of white wine
  • 1 clove of garlic
  • salt
  • pepper
  • parsley
  • olive oil


  • Check and wash the courgettes then slice them into very thin slices. Clean the prawns by removing the heads and the carapaces.
  • Brown a clove of garlic in the oil in a large enough non-stick pan.
    Lift the garlic clove and add the courgettes. As soon as the courgettes are cooked, add the peeled prawns and prawns. Adjust the sauce with courgettes and salt and pepper prawns and blend with the white wine and mix gently.
  • In the meantime, cook the pasta in plenty of salted water, drain it al dente and sauté it in the pan with the sauce for a couple of minutes before serving the zucchini and shrimp pasta on the plates.
  • Serve the zucchini and shrimp pasta with a sprinkling of pepper and a sprig of parsley.
