Sweet Potato Chocolate Mousse Recipe

Hello! Are you ready for the second part of my tofu series? Yes, because today I share with you one of my favorite recipes which features silky tofu. A sweet potato chocolate mousse! Perhaps you could also call it chocolate pudding because of its thick and creamy consistency. Either one is delicious.

I have shared the recipe a few times on my Instagram and Facebook and the response has been excellent each time. But for some reason, I had never sat down to take great pictures and write the recipe. Being a blogger requires a lot more work than you might think and I still have trouble with consistency, sorry 🙂

What I like most about this sweet potato chocolate mousse is that it is healthy enough to be eaten for lunch (breakfast in France), but also decadent enough to satisfy a sweet tooth after a good meal. It is made with a handful of healthy and simple ingredients:

  • a small cooked sweet potato (ideally steamed)
  • silky tofu
  • dates (ideally Medjool)
  • cocoa powder
  • a small frozen banana
  • a little vegetable milk

It is rich in fiber and antioxidants and, unlike regular puddings and mousses, it does not contain refined fat or sugar. And did I mention that it’s super easy to do? To save time, you can pre-cook the sweet potato and take it out of the fridge when you’re ready to make the recipe. You can also mix everything and keep in the fridge until ready to serve.

Sweet Potato Chocolate Mousse Recipe

This sweet potato chocolate mousse is ultra creamy thanks to the addition of silky tofu. It is even healthy enough for breakfast!

Ingredients

  • 100 grams of silky tofu
  • cup cooked sweet potato (1 small)
  • small frozen banana
  • 1/2 cup dates soaked if too hard
  • tablespoons cocoa powder
  • vegetable milk
  • chai spices (optional)

Instructions

  • In a blender, reduce all the ingredients except the vegetable milk until creamy. Add milk gradually if necessary to achieve the desired texture. 
  • Divide into two to four bowls and garnish to taste. 

Notes

Keeps for a few days in the refrigerator. Feel free to add a little nut butter or a tablespoon of hemp seeds to the blender.
